Trinh Diem Vy, aka ‘Ms Vy’, is a household name in Vietnam, where she runs an empire of restaurants and a bustling cookery school in the UNESCO World Heritage town of Hoi An. Ms Vy has more than thirty years’ experience in the kitchen – the first ten spent in her family restaurant as a child and young adult, and the next two decades in her own restaurants, starting with Mermaid in 1992, the first restaurant to cater to international visitors in Hoi An. She went on to open Cargo Club, a European-style café and patisserie; Morning Glory, a traditional Vietnamese restaurant; and Vy’s Market Restaurant and Cooking School, a unique culinary experience in a market setting. Each establishment has been the first of its kind in Hoi An. More recently, she has opened a boutique hotel, Maison Vy, in her hometown and another restaurant in Melbourne, Australia.
In 2011, Ms Vy published a cookbook of 68 recipes interspersed with her culinary memoirs, TASTE VIETNAM: The Morning Glory Cookbook. The book sold 25,000 copies within three years and Ms Vy has plans to write a second book, focusing more on the cultural, philosophical, nutritional and medicinal aspects of traditional Vietnamese cookery.
